It’s a FACT… Embracing a healthier fruit and vegetables diet will increase your life span by an amazing 42%.

A recently released research paper emanating from the UK gathered data from a 7 year study of 65,000 people over the age of 35 and came up with some staggering yet common sense conclusions.
Whilst participants ate around 4 servings of fruit and vegetables a day for the trial period researchers concluded that by taking it to 7 servings a day, the outcomes are more favourable for a longer life.
They also found :
• A 31% reduced risk of death by heart disease and stroke.
• A 25% lower risk of death by cancer.
• Showed vegetables have greater effects than fruit—with 2-3 portions of vegetables linked with a 19% lower risk of mortality and 2-3 portions of fruit linked with a 10% lower death risk.

Dried and fresh fruit and vegetables provide the best results whilst canned and frozen fruit actually increasing the potential for the risk of a faster death by 17 %. Fruit juice showed NO benefits at all.
The study results were released in the Journal of Epidemiology and Community Health. Lead Researcher DR Oyinlola Oyebode says ‘We all know that eating fruit and vegetables is healthy, but the size of the effect is staggering’.
Both Clare and I eat only fruit and vegetables each day – creating dishes which retain the experience of the sweet, sour, salty, savoury, creamy and crunchy eating experience.
If there’s resistance to eating fruit and vegetables then my best advice is to get your head checked for any mental instability – common sense must be allowed to prevail in your kitchen. Oh and we believe you can enjoy INCREASED levels of nutritional efficiency from your vegetables when they are not cooked. Vegetables lose as much as 70-90% of all nutrients when cooked over 115F or 42.5C.

RAW Vegan South Indian Sambar with Fragrant Rice & Fruit Salsa

In response to all the requests on Facebook and the 60+ shares (THANK YOU) I’m happy to share my unique recipe with you today.  I do get inspired when I go to my fridge and see a wide array of fresh, organic fruits and vegetables and one sure-fire way to help others transition from the ‘old world food paradigm’ is to tempt their tastebuds with herbs and spices. Curries are popular all around the world and there’s absolutely no reason why we can create deliciously tasting curry sauces which are UNCOOKED, GLUTEN FREE and a wonderful marinade for our veggies. I hope you enjoy creating these dishes in your own kitchen and would love to hear about your experiences.

South Indian Vegetable Sambar with Fragrant Cauli Rice & Fruit Salsa

A delightfully exotic taste sensation using the aromatic qualities of a South Indian curry blend
Author:
Recipe type: Main
Cuisine: RAW Vegan
Serves: 4
Ingredients
Chop the following into ½ bite size and vary quantities to meet your needs.
  • Cauliflower
  • Broccoli
  • Zucchini
  • Leeks
  • Tomato
  • Coriander for Garnish
Place the above in a prep bowl except for the garnish.

For the Cauli Rice
  • ½ Cauliflower
  • A Good Clutch of Mint
  • 1 Red or Green Chilli
  • Juice from 1 Large Lemon
  • Splash of Macadamia Oil
  • S&P for seasoning

For the Fruit Salsa
  • ½ Ripe Red Paw Paw – diced into medium bite-size pieces
  • 2 Firm Mangoes – diced into medium bite-size pieces
  • 2 Dsp. Organic Desiccated Coconut
  • Juice of 1 Small Lime
  • S&P to taste
Instructions
In your personal blender mix the following:
  1. Can of Nakula Coconut Cream or Milk. If it’s mildly solidified then warm the can in warm water or 10 minutes in the dehydrator. Shake before opening.
  2. ½ a Thumb of Fresh Ginger
  3. Juice of 2 Limes or Lemons
  4. Dsp South Indian Sambar Curry Powder – a blend of Coriander Seed, Besan Flour, Cumin Seed, Black Pepper, Mustard Seed, Turmeric, Fenugreek Seed, Amchur, Mild Chilli, Salt, Cinnamon, Dried Curry Leaves and Asafoetida. If you cannot make or find this blend then find a curry powder that you like.
  5. Tsp Onion Powder
  6. Tsp Mustard Powder
  7. S&P
Blend all the above ingredients and pour over your prepared vegetables. Let vegetables sit for 2-3 hours in your prep bowl before transferring to your serving dish and garnish

For the Cauli Rice
  1. Pulse all the ingredients together to create a ‘rice-like’ consistency.
  2. Reserve some of the lemon juice for finishing.
  3. Garnish with red or green herbs/leaves, a grind of black pepper and the remaining lemon juice.
  4. Serve in a nice bowl.

For the Fruit Salsa
  1. Combine the diced fruit in a prep bowl
  2. Add the lime juice
  3. Add the coconut
  4. Gently stir coconut through the fruit so that it sticks to each piece
  5. Spoon into separate serving bowl
Notes

Red Plum & Padre de Pimiento Salad

At this time of the year, plums are plentiful as are sweet chillies – Padre De Pimiento’s – are available in abundance.

Now these Padre De Pimientos are also known as the Roulette Chilli because one in every 12 is hot but acceptable even to the untrained chilli palate.

With the plum combination the tastes are amazing.  You may also use cherries, which also provide a sweetness against the backdrop of the savoury chillies.

This salad combination is a real winner with family and guests.

A great dish to prepare when these padre de pimiento chillies and plums are in season, wherever you are in the world. GLUTEN FREE, DAIRY FREE Raw Vegan Recipe
Recipe type: Lunch
Cuisine: Italian
Serves: 4
Ingredients
  • 2 Cups of Red Plums stoned and sliced
  • 5 Green Padre De Pimentos – sliced crosswise with seeds intact
  • 2 Spring Onions – sliced
  • ¼ Cup of Pine Nuts
  • Olive Oil
  • Juice of 2 Limes
  • 1 Dsp. Apple Cider Vinegar
  • S&P
Instructions
  1. Mix the plums and chillies in a prep bowl
  2. Add the sliced spring onions and the pine nuts
  3. Sprinkle with olive oil, lime juice and apple cider vinegar
  4. S&P to taste
  5. Toss ingredients together and transfer to a serving bowl

Diets, Detoxes & Digestive Dilemmas

Oh dear me… here we go again!  Only days into 2014 and the endless round of diets, detoxes, digestive dilemmas, cleanses, fasts and who knows what else, are being advertised thick and fast in the lamestream and online media. Haven’t you learned yet that this is what you got involved with last year and you were left with NO long term benefits? The average NY resolution lasts 5.3 days.

These ‘unnatural’ and enforced physiological approaches just further traumatise the body and throw the balance of your being further out of whack.  Following up from this time of year with such punitive and restrictive action can cause deep-seated cellular and emotional stress.  Then dealing with the post-festive season reality that your credit card is maxed out, the kids need books and clothing for school, all mounts up.

This can be a time when ‘old patterns’ are confronted on the deeper spiritual level NOT just what you see standing in front of the bathroom mirror. YOU can retrieve you body weight, shape and almost your thought patterns as though you were a 22 year old.  In fact, pick an age and make that your perfect target.

Both Clare and I are about the same weight we were when 25 years old (and younger). We are both in our 60’s now and what is more important, we have put aside ALL outside efforts to capture our patronage via emotional stealth.  Would you like to do the same? (See a previous article I wrote about our 60’s )

Resist the urge to get sucked into a weight loss, cleansing or detoxing scheme when you can do this daily for the rest of your life and recover your natural balance in a moderate and easy way.  Your body and mind WILL thank you for taking this different and calmer approach.

The BIG issue here is to develop an understanding about the efficiency of your gut function which 100% determines how well you are, what your body looks like, what your skin looks like and how your mind feels . If you thought you could get away with holiday indulgences then you are deluding yourself – too much animal protein, too much cooked food, too much sugar, too much alcohol – all add up to a dangerous life-threatening cocktail of physiological disaster just waiting to happen.  The older we get, the less chance the body can totally recover and find its balance again.

So what CAN you do?

Focus on using food and your gut function as your primary healing tools.  Most people operate on less than 15% gut efficiency because the gut is always trying to break down food – yes that’s 24hrs of being in ‘Digest Mode’.  The body has a rhythmical approach to processing food, absorbing nutrients and expelling waste.  Get into the rhythm and your way of life will begin to profoundly improve. Most peoples stomachs are ‘conditioned’ to exist in a state of trauma, by years of poor nutritional intake (ie eating the wrong kinds of foods or over-consuming).  The body compensates as best it can and this is why symptoms like bloating, stomach cramps, reflux, horrible skin issues, tiredness and lethargy, diabetes, cardiovascular issues, depression – to name just a few – become predominant.

Chocolate Truffles are very popular at any time, but especially so at Christmas. Here's a raw vegan version for you to try. Dairy-free, Gluten-free.
Recipe type: Dessert
Serves: 10
Ingredients
Truffles
  • 1.5 cups Macadamia Nut Fines (finely ground macadamia nuts)
  • ½ cup Raw Cacao Butter
  • ¼ cup Coconut Oil
  • ¼ cup Agave
  • 1 Vanilla Bean (scraped)
  • Pinch of Salt
Chocolate Sauce
  • 1 cup raw Cacao Powder
  • 1 cup raw cacao butter
  • ¼ cup melted coconut oil
  • 1 Tbs Vanilla
  • ¼ - ½ cup agave syrup
  • pinch of salt
Instructions
Truffles
  1. Blend agave, oil, cacao butter, salt and vanilla together
  2. Mix with fines
  3. Pop mixture in fridge to firm up so it comes mouldable
  4. Roll into desired shapes
Chocolate Sauce
  1. Stir or whisk all ingredients together to create a smooth chocolate sauce
  2. Dip truffles in chocolate and place in fridge to set
  3. Remove from fridge and dust lightly with Cacao Powder
  4. TIP: Keep tasting and adjusting sweetness as desired

This simple, easy and delicious raw dessert took one of my classes in 2013 by storm!  Virtually everybody in the class returned home and proceeded to create this delight for family members with resounding results.  A fabulous outcome- try it now !!

Mango Chocolate Brulee - Raw Vegan Recipe

Mango Chocolate Brulee - Raw Vegan Recipe. Simple to make and easy to digest. Dairy-free, Gluten-free
Recipe type: Raw Vegan Dessert
Serves: 4-6
Ingredients
Chocolate Sauce:
  • ½ Cup Nakula Coconut Oil
  • 1 Tsp. Carob Powder
  • 4 Tbsp. Cacao Powder
  • 4 Tbsp. Agave Syrup or Maple syrup
Mango Sauce
  • 6 Mango Cheeks whole and fresh
  • ½ - ¾ tin good quality Coconut Cream
Instructions
  1. Blend the mango and coconut cream together in your personal blender until nice and creamy.
  2. Fill your serving glasses (martini glasses work well) and set aside.
  3. Blend chocolate ingredients together in a blender.
  4. Taste and adjust to desired sweetness and texture.
  5. Pour equal quantities over the mango
  6. Level off and sprinkle with some shaved coconut, berries or nuts as desired.
  7. Chill for 1 hour to allow the chocolate to harden and serve. YUMBO!!!
Notes
Sprinkle with coconut palm sugar and caramelise with a Chef's Torch for a real 'brulee' taste!

To be honest ‘Christmas Goodies’ is a misnomer; more like ‘Christmas Baddies’!!

 

Indigestion, Heartburn, BloatingAfter you’ve enjoyed the usual ‘feast’ on Christmas day, the overwhelming feeling of being ‘stuffed to the gills’ is, in fact, a reality. Your gut muscle will be pushed to the limit and its ability to breakdown proteins in particular, is compromised to the extent that almost 95% of the meat, dairy and wheat will be forced by gravity into your lower intestine in a totally unprocessed state.

Into the New Year is when all the health and fitness companies come out of the woodwork offering ‘get healthy’ and ‘get fit’ programs, because they know what I have just shared with you and you’re perfectly positioned to be drawn in and, dare I say… exploited by the big companies who invest millions in TV, Newspaper and Magazine advertising – in fact, as an ex-journalist I KNOW the copy is already written, edited and proof read… just waiting to go to print right now!!

 Your body’s digestive metabolism will be running at less than 10% efficiency because of the on-going trauma associated with eating far too much food. Most people suffer from a slow digestion anyway and then they will throw excessive amounts of unnecessary food down their gullet only to STOP the digestive process entirely. The effect of this has broad implications for your body. It’s plainly DANGEROUS.

If you’re in the 45-70 age group, a compromised digestive metabolism WILL exacerbate inflammation in the body, increase levels of acidity, block primary channels in your digestive tract, cause energy levels to plummet, cause chronic constipation and abdominal pain and curtail the distribution of essential nutrients to key parts of the body – brain, cardio vascular, kidneys, liver and muscles. In short, the body will think you want to kill it by shoving too much food into it, just because you think you have to participate in the festive activities.

Do you have a choice? Can you back off and consider the effects that over-indulgence will have on your life expectancy?

The answer is undoubtedly a resounding YES.  Your over-eating and drinking actions today, WILL shorten your life. Excessive and unnecessary food intake is like starving a tree of water. Sooner or later the tree will experience a premature death. Is this what you want to happen to your body? Eating far too much food does not provide your body with the essentials it needs to continue to operate.

Be kind to your body and be prepared – even the most disciplined healthy eater will capitulate when cajoled, prodded and pushed by very well-meaning family and friends to ‘go on… spoil yourself a little – it’s Christmas!!’.

 

Indigestion, Heartburn, BloatingSo, from my heart to yours, please take care this year and do your utmost not to end up a statistic – cardiac arrest amongst men and women at this time of year is very common.  Many people confuse the signs of a heart attack — like shortness of breath or chest pains —with indigestion from a big dinner.

Ok, here is something which I know from personal experience will help make the journey through Christmas and New Year a little more enjoyable.

Using cauliflower as a Pizza Base is a wonderful variation on the norm – using nuts and seeds etc.  This is a delightfully fragrant, spongy base that will have the family crying out for seconds.  TIP:  Serve straight from the dehydrator if you like your food slightly warm and top with a freshly-made tomato sugo (sauce), marinated mushrooms, sundried tomatoes, olives and a generous sprinkling of nut ‘parmesan-type’ cheese.

Pizza Tuscana with Cauliflower Base - Raw Vegan Recipe

RAW Pizza base using cauliflower is a different take on the seed based version. Simple, tasty and popular. Vegan, Gluten and Dairy Free.
Recipe type: Main
Cuisine: Italian
Serves: 6
Ingredients
BASE:
  • 1 Whole Med. Sized Cauliflower trimmed and chopped into pieces
  • 1 Cup of Nut Parmesan Cheese (¾ cup of macadamia nut fines blended with ¼ cup of nutritional or savory yeast, a grind of black pepper – also keep some back for topping)
  • ¼ to ½ cup of Flax Meal (ground Linseeds)
  • S&P to taste
  • Squeeze of lemon or lime juice
TOPPING:
  • 4 Lge. Vine Tomatoes –hold a ½ back for topping
  • 1 Cup of Sundried or Semi Dried Tomatoes
  • 1 Clove of Garlic
  • ½ Red Bell Pepper –hold 2 dsp. back for topping
  • 1 Dsp. Olive Oil
  • 1 Cup of your favourite Olives
  • 1 Tsp. Mixed Italian Herbs
  • 7 Fresh Thyme Stems or fresh Basil
  • S&P to taste
Instructions
For the base:
  1. Blend these ingredients in your food processor using the lime juice to create a firm but pliable mixture with the cauliflower pieces 1-2mm in size.
  2. Using a stainless steel spatula spread the mixture into a circle on your teflex paper if you are using a dehydrator or baking paper if using your oven.
  3. Turn your dehydrator to 145F and let run for 1hr and then turn back to 115F.
  4. As soon as the base starts to firm up it’s ready to be turned over.
  5. Continue to dry in dehydrator for another 5-6hrs and the oven 3-4hrs. Avoid making it too dry.
(Oven users – open the door, get the temp to just 50C with the fan on).
For the topping:
  1. Blend the tomatoes, sundried tomatoes, bell pepper, garlic, oil and mixed herbs until a rich and smooth sauce consistency is achieved.
  2. Add more sundried tomatoes to make it richer if necessary.
  3. Once the base is dried, spread the topping sauce around it, covering the surface area completely to a ½ cm thickness.
  4. Place the base back in the dehydrator for another hour so that the sauce dries and consolidates.
  5. Arrange the rest of the toppings on your pizza base.
  6. Finish off by sprinkling with more nut Parmesan and adding the sprigs of thyme or basil and serve.

Sometimes I get old world hankerings for comfort food.  I don’t dive for the potato crisps or wine any more.  Instead, I create something deliciously ALIVE !!

My trick is to ‘think’ it through, looking at an image of cooked food and seeing how I can replicate the dish entirely uncooked and RAW.  So here is my take on Mushroom Stroganoff which I know you will enjoy.

This used to be one of my most favourite cooked dishes. Now through the wonders of new found awareness and imagination I have created a fully RAW stroganoff recipe which, frankly, you would not know was made with 100% plant ingredients with no cooking.
Recipe type: Main
Cuisine: RAW Food
Serves: 4-6
Ingredients
  • 2 Cups of Button Mushrooms sliced
  • 1 Clove of Garlic
  • ½ White or Red Onion
  • ½ Cup Olive Oil
  • ¼ Cup Shoyu Soy Sauce
  • ½ Cup Semi/Sun Dried Tomatoes
  • Juice of 2 Lemons
  • ½ Cup of Soaked Cashew Nuts
  • 1 Cup of Coconut Cream (I prefer Nakula brand)
  • ¼ Cup of Chopped Parsley
  • S&P for taste
  • 1 Med Cauliflower broken down into florettes
  • Juice of 1 Lime
  • Dash of Olive Oil
  • S&P
Instructions
  1. First put the sliced mushrooms into a bowl and add the olive oil, shoyu sauce and juice of 1 lemon along with ½ tsp. of desert salt and a good grind of black pepper. Leave them immersed for an hour or two until fully marinaded.
  2. In your Vitamix/Thermomix or vertical blender add the cashew nuts, coconut cream, garlic, onion, juice from one lemon and the semi-dried tomatoes. Blend thoroughly. Add salt to taste. Add also a dsp. equivalent of the marinade, which will give the sauce a rich ‘reduced’ appearance.
  3. Now strain off the mushrooms into a separate prep bowl and pour in the creamy liquid. Fold in the mushrooms. If you have some of the cream left then keep that aside and use as a mayo base for salads etc. Set aside for 15 minute to let the creamy flavours infuse through the mushrooms.
  4. Drop the florettes into your food processor and pulse to a rice consistency. Add the lime juice, dash of oil and S&P to taste.
  5. Spoon off the rice into a nice serving dish and ladle off the stroganoff mixture and top off with parsley, finishing with a drizzle of oil and a grind of pepper.
  6. This is a hearty old fashioned meal which will warm the cockles of any open heart!!
Notes
You can also mix the freshly chopped parsley and mix it in with the mushroom sauce otherwise use as a garnish.

I wrote a piece this week for the local online newspaper called The Noosa Independent. It was about fallacies associated with age and the body actually being a biological computing device. Here is a quote:

Scott Mathias at 60!‘I have to say I sense a cruel trick has been played on myself by other powers wishing to subvert the course of personal spiritual evolution. Like all good observers of magic, sooner or later, the trick is revealed and you get to understand how the ‘sleight of hand’ or illusion has been perfected over millennia’.

In essence external forces like government policies, the news media, education and religion have dictated how we lived our lives. This also filters down to the type of food we eat being dictated by government agricultural policy.

At the forefront of the ‘battle to retain your mind’ is the influence the meat, wheat, dairy, processed foods and sugar industries have over getting your last nutritional dollar. It’s horrendous to think, these five key food categories are contributing to more long-term chronic illness than any other factor in the history of humankind. This is why in the vernacular of my 19 year daughter, I don’t ‘DO’ TV news, newspapers, radio, supermarkets, eat meat, wheat, dairy, processed foods or take white sugar.

As a consequence I am suffering from chronically excellent health with no aches or pains anywhere along with a healthy prostate. My mind is growing to love my ever-active cellular body with a clear intention to survive the changes taking place on the planet right now.

So where does all this lead us? My RAW Food Master Classes are (once again in teen vernacular) ‘going off’ !! People of all ages – men, women and children – are ‘rocking-up’ to learn how to get OFF the wheel of the contrived and managed life, and look to find their own ‘nutritional souls’ once again.

I write this on the eve of my 60th EarthDay and I can say I have never felt better, more aligned and happier in my whole time on this beautiful planet. Look at the faces in these images. They are alight with curiosity and aglow with conscious awareness around what sort of lives they want to lead in order to stay well and out of the clutches of the medical pharmaceutical complex.
