The Recent Trends in Raw Vegan and Vegetarian Recipes – Why Are People Changing Their Eating Habits?

McDonalds for lunch? Perhaps not so long ago that was the trend, but today’s trends seem to be moving in a slightly (or maybe not so slightly) different direction.

According to USA Today McDonald’s revenues, operating income, and earnings per share have declined significantly; enough that the CEO admits the company has lost relevance with key customers.

McDonald’s competitors however, are listening to consumer’s demands and are offering much healthier options. These options include more organic foods, expanded vegan options, and numerous raw foods in the form of fresh produce. Their reward? An increased customer base with the expected upswing in sales and income.

The Australian Food News (AFN) website is paying attention  too. According to Mintel surveys, the current trend of moving towards healthier eating can be broken down into “What’s Hot,” or hot trends for this year’s restaurant menus.

Some of these trends include:

• Gluten-free cuisine
• Sourcing local gardens
• Vegetarian/vegan options
• Healthy kid’s meals (fruit/veggie sides)
• Ethnic-inspired meals free of animal products

The recent trends in vegan and vegetarian recipes show that demand is high and 2015 is set to see a dramatic increase in cafes/restaurants offering raw food.  The vast majority of restaurant owners are finding customers are ordering more healthy options than they did even 24 months ago. But why? What’s behind this trend towards healthier foods, many of which support a raw vegan lifestyle.

These trends are indicative of the public coming to the realisation that their overall health has been steadily declining over the past few decades. The dramatic rise in the numbers of those suffering with chronic disease and obesity makes this reality impossible to ignore.

The behaviours responsible for this steady decline?

1. Smoking
2. Drinking alcohol
3. Embracing a sedentary lifestyle
4. Avoiding fruits and vegetables (diet based on animal products)
5. Consumption of processed foods (high in fat, sugar, and salt)

Sick and tired of actually living a lifestyle that makes us sick and tired, many of us are looking for something else; and the fruits, vegetables, and wide variety of other antioxidant-rich, high-fibre foods that make up the raw vegan lifestyle seem to be just what the doctor ordered.

Void of all the things that sabotage good health, i.e., animal protein, animal fat, and processed and cooked foods, a healthy lifestyle can make the chronic and degenerative diseases which are accepted as a natural part of aging, trends of the past. With hundreds of raw vegan restaurants sprouting up across the globe, the recent trends seem to be going in the right direction and will soon become the trends that are here to stay!

Remember.. RAW Food is about ‘liberation’ and not ‘limitation’.

Impact of Commercial Animal Production on the Planet

Does 150 billion seem like a huge number to you? It’s an astoundingly large number, especially when you realize it’s the number of animals killed every year (worldwide) in order to put meat on our plates, milk in our glasses, and eggs in our cartons. It’s more than 20 x the number of people on the earth today and the impact of animal production is no longer sustainable!

Commercial animal production is no stranger to Australia either; concentrated (or confined) animal feeding operations (CAFO) or factory farming, is the primary method for raising animals in this country.

The resources required to meet the demand for this many animal products across the globe can no longer be supplied by the small family farmer. Beyond the obvious effect on the vast number of animals that are slaughtered, what is the impact of commercial animal production on the planet? The meat, egg, and dairy industries would have you believe the impact is minimal; however, the facts speak for themselves.

Raising large numbers of animals for food means we have to sacrifice our land, water, and energy. And in staggering amounts!

Land

How much land? Up to 80% of all land which is used for agricultural purposes! Commercial animal production takes up more land space than any other food production system in the world due to its need for:

• Pastures
• Feed crops
• Factory farms
• Lagoons

What are lagoons? Lagoons are uncovered, open areas of land where animal waste is stored. Animals raised in the United States produce over 1 million tons of waste every single day; and that’s just in the U.S. These lagoons are breeding grounds for bacteria, seep toxins into the surrounding waterways, and release methane into the air, a major contributor to global warming.

Rainforests

The rainforests are at risk too! According to National Geographic almost 20 percent of the rainforest in the Amazon has been cleared in the past 4 decades! Why? In order to keep up with the amount of land required for raising animals, the food to feed them, and sadly, to provide meat eaters with a less expensive hamburger at McDonalds. Soybeans are grown there to feed the animals which feed the people. Soy fields have a lifespan of only 10 years after which the land is completely useless.

Water

Water is one of our most cherished resources and is used very inefficiently when it comes to raising animals for food. A prime example: 1 pound of grain-fed chicken requires almost 420 gallons of water to produce while 1 pound of grain requires only 25.

Water is needed for various aspects of commercial animal production and includes:

• Crop irrigation
• Waste clean-up
• Drinking water for the animals

Energy

The amount of fossil fuel used to bring an animal from its birth to its death and then to the consumer’s plate is difficult to calculate; however, it involves:

• Production (raising the animal)
• Transportation (to the slaughterhouse, the store, and the home)
• Processing (feed lot, slaughterhouse)

Food production in general presents problems and concerns; however, a meat-based diet is simply not sustainable, while a plant-based diet, especially one which contains no animal products of any kind, is much more planet-friendly.

How Can You Help?

I’m known as The Gut Whisperer because of my work in helping people understand how the gut works and why we need to consume more plant based proteins instead of meat protein. As you can see, the positive impact a vegetarian and vegan diet has on our own bodies also benefits the land that we walk on.  It reduces the suffering of animals at the same time who, at the present time, are used solely for our selfish and unnecessary desires.  It’s no secret that humanity, as a race, are getting sicker and sicker and the concern over Global Warming and the devastation of our planet is a concern for millions of people around the world.

There’s an abundance of healthy foods growing all day every day that does not involve harming our environment.  The increase in consumption of fresh organic fruits and veggies indicates that the tide is turning… but we need to do more.  Our own HEALTH depends on it.

100 RAWSOME Guests Go Vegan at Ricky’s Bar & Restaurant on the Noosa River!

I have  passion.  I also have deep faith.  The two go hand in hand and what is unfolding right now at this time in my life was unimaginable, yet somehow ‘in the program’.

The recent launch of the Let’s Eat RAW recipe book at Ricky’s on the River, right here in Noosa, was a resounding success.

More than 100 people gathered to experience a mini-raw degustation prepared by Ricky’s head Chef, Braden White and his team – small yet very assuming dishes filled the bellies of the gathered.  Served with kombucha from Buchi – Australia, the food went down a treat.  It was so heartening to see NO meat, wheat, dairy, processed food, white sugar or cooked food on the luscious menu.

This Week’s Challenge?  Mushrooms with Wild Herb Cream Sauce!

Here’s another quick and simple recipe for you to try as part of the Let’s Eat Raw Midweek Challenge.  A little bit more effort than last week, but most of the time involved is in soaking nuts and preparing the marinade.  The actual presentation will take you just a few minutes.  So, if you’re the type of person who likes to be organised, here we go!

MUSHROOMS remain an all-time favourite of mine. They are full of B12 and Niacin and are a wonderfully healthy food when integrated into your diet on a regular basis. Here is a recipe taken from one of my recent RAW Food Master Classes. It would make a great addition to your festive-fare table - not cooked and no dairy either.
Recipe type: Main
Cuisine: RAW Vegan
Serves: 4
Ingredients
  • 12 Med. Size Swiss Brown or Portobello mushrooms bases trimmed
Marinate in the following mixture for 2-3 hours:
  • 1 Cup of Olive Oil
  • ¼ Cup of Lime Juice
  • ¼ Cup of Coconut Palm Syrup or Agave
  • S&P
For the wild herb cream:
  • ½ Cup of RAW Cashews – soaked at least 1 hour
  • ½ Cup of Macadamia Fines – finely chopped macadamia nuts (no need to soak)
  • 1 Garlic Clove
  • Juice from 2 Limes
  • 2 Tsp. Fresh Thyme leaves & as some whole fresh pieces of thyme for garnish
  • 1 Tsp. of Olive Oil
  • S&P to taste
Instructions
For the cream:
  1. Blend these ingredients and adjust seasonings to suit.
To serve:
  1. Remove the mushrooms from the marinade and place onto kitchen paper to absorb the excess moisture.
  2. Line the mushrooms up on a nice serving platter.
  3. Drizzle the cream sauce over the top.
  4. Sprinkle some the thyme pieces as a garnish.
  5. Splash some olive oil over the top along with an additional grind of black pepper.

FRIDAY FOCUS:  Good News For Diverticulitis Sufferers… read on!

So, what exactly is Diverticulitis and how can it be cured?

More than one third of people over 45 years of age, and two thirds of people over 85 years of age have some diverticular disease, or ‘diverticulosis’.

Diverticulitis (DV) is a painful and annoying disorder causing cramping, bloating and sometimes severe local pain in the lower stomach.  DV is just one of the handful of names given to inflammatory disorders of the lower intestinal tract and happens when diverticula or “pockets” develop in the colon, especially the sigmoid area.

People with DV often have low-fibre diets and poor protein absorption.  In other words, unprocessed protein (meat and dairy) gets stuck in the ‘pouches’… starts to rot… and the ensuing presence of bacteria causes painful inflammation and irritation.

Western countries where the diets are high in animal proteins and processed foods, report the greater incidence of DV.  Africa has the lowest recorded incidence because diets are higher in fibre.

Did you know?  Meat protein takes 72 hours to break down and move through the system – and that’s when the body is working properly!

All major health agencies and DV websites recommend an increase in the levels of green plant-based food.  The Dieticians Association of Australia recommend introducing more fruit and vegetables to your diet and recommends leaving skins on and seeds in.  Whilst that is good, the recommendation overlooks ‘the cause’ which almost always leads back to the gut function or ‘lack’ of function as the the case may be.

This is what happened to me!

In my own case, I was in and out of vegetarianism for much of my life, so I had the high fibre but I also still had the DV.  Why?  To put it in layman’s terms, my digestive metabolism was functioning at next to zero, so proteins, namely meat and dairy, weren’t being broken down appropriately.

Then, by the force of gravity, these unprocessed ‘proteins’ dropped into my lower intestine and became lodged in the ‘pockets or pouches’.  This unprocessed food becomes a breeding ground for bacteria, which causes the inflammation and abdominal pain.

BUT HERE’S THE GOOD NEWS! – The solution is easy.

Put simply, a diet of fresh fruits and vegetables will help heal DV

  1. Eat more fruit for breakfast so that the fibre and enzymes in the fruit can contribute to more efficient bowel movements.
  2. Introduce more uncooked whole greens, reds, yellows and orange coloured vegetables to your daily intake. Learning to prepare beautiful plant based recipes will not only inspire you but also send the ‘gut pain’ packing.
  3. Add some green papaya powder (GPP) after your food intake, which will assist in breaking down ALL proteins whether they continue to be animal, vegetable or fruit.  The papain enzyme in the GPP is proteolytic in nature which means it is
  • ‘protein hungry’ and will immediately get to work to relieve the pressure on the digestive function
  • strengthen the gut muscle
  • contribute to the production of a healthy chyme (macerated liquid foods)
  • increase absorption which occurs in the small intestine and ensures ALL by-waste has an opportunity to flow freely from your body during your daily bowel movements.

 

Knowledge is King!

Once I had the knowledge, I found the process of self-healing DV straight-forward and second nature for me, and now I can say I am free of DV attacks (and the very painful symptons which really did feel like an attack on my body).

Despite the odd niggle when I eat grapes with seeds in the them, I enjoy seedless grapes when I can.  I also have chosen NOT to eat animal products of any nature, nor do I eat processed foods or sugar.

insulin-how-to-400x400‘Diabetes is a chronic disease characterised by high levels of glucose in the blood.  Blood sugar levels are controlled by insulin, a hormone produced by the pancreas.  Diabetes occurs when the pancreas is unable to produce enough insulin, or the body becomes resistant to insulin, or both.’ http://www.health.gov.au

There are two types of diabetes :

• Type 1 is an auto-immune disease where the body’s immune system attacks the insulin producing cells of the pancreas.

• Type 2 is associated with hereditary factors and lifestyle risk factors including poor diet, insufficient physical activity and overweight or obesity.

Understand the above definitions are from so-called ‘official sources’.  However, diabetes remains a symptom – but a symptom for what?  It is NOT a death sentence or a lifelong chronic illness one  has to live with.

DIABETES IS BEING CURED and, if you have diabetes, it is worth taking a moment to examine some background, which may enable you to get off your insulin dependency and continue to live a balanced and happy life.

Before I talk more about how you can heal yourself of diabetes, let’s take a moment to look at the extensive revenue and profit driven nature of diabetes.

Diabetes is a multi-billion dollar business market, making a handful of key pharmaceutical companies a tremendous amount of money.

According to a new technical market research report, ‘Diabetes Therapies and Diagnostics’ from BCC Research, the global market value for diabetes therapies and diagnostics is massive and growing.

• An estimated $38 billion in 2010, but is expected to increase to $51.2 billion in 2015, for a 5-year compound annual growth rate (CAGR) of 6.1 per cent.
• The largest segment of the market, insulin products (including administration devices), is estimated to be worth $16.4 billion in 2010, and is expected to increase at a CAGR of 6.1 per cent to reach $22 billion in 2015.
• Around 280 Australians are diagnosed with diabetes every day with an estimated 3.61 million with diabetes or pre-diabetes.
• The key profiteers from this ‘ mere symptom’ are : Novo Nordisk, Takeda, Sanofi-Aventis and Eli Lilly. http://healthcare.financialexpress.com/201009/market08.shtml

These companies have a vested interest in there NOT being a cure found for diabetes.  Yet your cure might be as easy as changing some food types which form part of your daily meals.

US based Dr Gabriel Cousens runs very effective diabetes cure programs through his Tree of Life Centres in the US.  Using primarily LIVE, GREEN AND RAW plant-based nutrients, Dr Cousens can report astounding success facts.
