I see the passing of a beautiful soul nowadays as a time for celebration not of wallowing in sadness and loss. Death for me is a time to celebrate the LOVE we have for that being who graced us with her presence and, long after, I feel will continue to grace us with her beauty and her laughter.

I am referring to RAW Food advocate Cher Tills, who the other morning, woke up in ‘heaven’!! Each of us has a soul contract and she had made hers and her time to ascend was now so that she would remain such an angelic reflection for us all. Just two or so weeks ago I was fortunate enough to ‘star’ with Cher on her Blog Radio show and what an exhilarating time it was. When I came off after an hour of talking I felt filled with love and joy; these elements of a pure life remain with me. Thank you Cher… I will be listening!!

So to celebrate what about some Cacao Chocolate and Macadamia Nut Soup ? A meal on its own, not as a sweet after a ‘main course’,  but a ‘main course’ like LIFE itself!! I know that Cher will concur that this is a treat to behold.

When I was a SAD Eater I loved creamy cows cheese – Camembert and Brie- suffice to reveal that my wee gut really wasn’t able to cope with the lactose and the casein and I suffered accordingly. So why suffer without ? Now my super dooper cashew and almond nut cheeses are amazing and a 1000% better for my system. My body loves this form of protein. So I thread some olives and sundried tomatoes through the mix, place it in a form and leave ‘lying around for a few days’ to mature and bingo, a taste to behold.

I topped off one of the cheeses with my beautiful Kale Dukkah and the other with Hemp seeds. Both really amazing and different with their own ‘tops’ on. Cashew Nut Cheese

Putting together something simple but impressively RAW when guests drop by can be challenging but not so if you have some basics always on hand.  Cashew Nut Cheese is something I pretty well have all the time now in my fridge.  I make a lot of nut milk for use in the form of mayo’s  so it stands to reason I have plenty of the beautiful cheezey by-product around too.

Cashew Cheese Platter

So take three good dessert spoons of cashew nut cheese and placed in a bowl and season with sea salt and cracked pepper. Take a small round stainless steel food ‘form’.  Slice off a round of cucumber to drop neatly into the form. Then get stacking. First:

  • Add the first layer of cashew nut cheese
  • Followed by finely diced tomato and cucumber with squeeze of lime or lemon and chilli flakes mixed in
  • Then top off with diced gherkin
  • Slide the form off
  • Garnish with a dice or two of tomato and some shredded basil
  • Finish by assembling on a white serving plate with equal drizzles of fresh lime/lemon juice and either olive or macadamia oil with a grind or two of cracked pepper.
  • SERVE to guests who will be blown away by the taste combination.

This easy and simple yet divinely impressive presentation of RAW canapes is a sure winner when the unexpected or the planned guests arrive!!
