This Week’s Challenge?  Mushrooms with Wild Herb Cream Sauce!

Here’s another quick and simple recipe for you to try as part of the Let’s Eat Raw Midweek Challenge.  A little bit more effort than last week, but most of the time involved is in soaking nuts and preparing the marinade.  The actual presentation will take you just a few minutes.  So, if you’re the type of person who likes to be organised, here we go!

MUSHROOMS remain an all-time favourite of mine. They are full of B12 and Niacin and are a wonderfully healthy food when integrated into your diet on a regular basis. Here is a recipe taken from one of my recent RAW Food Master Classes. It would make a great addition to your festive-fare table - not cooked and no dairy either.
Recipe type: Main
Cuisine: RAW Vegan
Serves: 4
Ingredients
  • 12 Med. Size Swiss Brown or Portobello mushrooms bases trimmed
Marinate in the following mixture for 2-3 hours:
  • 1 Cup of Olive Oil
  • ¼ Cup of Lime Juice
  • ¼ Cup of Coconut Palm Syrup or Agave
  • S&P
For the wild herb cream:
  • ½ Cup of RAW Cashews – soaked at least 1 hour
  • ½ Cup of Macadamia Fines – finely chopped macadamia nuts (no need to soak)
  • 1 Garlic Clove
  • Juice from 2 Limes
  • 2 Tsp. Fresh Thyme leaves & as some whole fresh pieces of thyme for garnish
  • 1 Tsp. of Olive Oil
  • S&P to taste
Instructions
For the cream:
  1. Blend these ingredients and adjust seasonings to suit.
To serve:
  1. Remove the mushrooms from the marinade and place onto kitchen paper to absorb the excess moisture.
  2. Line the mushrooms up on a nice serving platter.
  3. Drizzle the cream sauce over the top.
  4. Sprinkle some the thyme pieces as a garnish.
  5. Splash some olive oil over the top along with an additional grind of black pepper.

Here it is, a new EASY recipe that doesn’t involve COOKING.  Yay!

Today is Wednesday … you have time to plan ahead and obtain your ingredients before the weekend.  So, decide now.  Friday, Saturday or Sunday?  Great!

Very Easy, Very Yummy

This VERY EASY recipe kicks off this series of ‘challenges’ and it’s one that I KNOW everyone will love!  Who doesn’t love CHOCOLATE MOUSSE?  This “Let’s Eat Raw” challenge recipe is as I said last week, a GREAT way to get kids to eat more vegetables because even though it’s a chocolate mousse, NONE of the ingredients contain harmful sugars and the ‘mousse’ texture is achieved by using AVOCADOS …. yes, you heard right AVOCADO CHOCOLATE MOUSSE!  The taste is seriously DELICIOUS.  Let’s get going!

 

Let's Eat Raw Midweek Challenge - Chocolate Mousse

Quick and easy to make VEGAN Chocolate Mousse. DIARY-FREE, GLUTEN-FREE
Recipe type: Dessert
Cuisine: Raw Vegan
Serves: 2
Ingredients
  • 1 Ripe Avocado
  • 1 Ripe Banana
  • 3 Desert Spoons of Maple Syrup or Agave (reserve some to adjust flavour before serving)
  • 3 Desert Spoons of Cacao Powder
  • A dash of pure Vanilla essence
  • A pinch of Salt
  • Cacao Nibs for topping
Instructions
  1. Place all the ingredients into a small 2-Cup type blender or regular blender and blitz until creamy and smooth.
  2. Hold back on some of the Maple or Agave to finish off based on your sweet preference.
  3. Spoon in separate serving glass and top with Cacao Nib (Increase quantities to suit).

In this RAW Vegan Recipe – Tamil Poriyal you can make a tasty midweek curry for your friends and family that contains 100% nutrition.

Most people enjoy the flavours of the orient and this easy-to-make curry will wow your friends AND your tastebuds.  The basic ingredients are, quite simply, shredded coconut, carrots and peas.  Serve on its own or with a simple cauliflower rice… Enjoy!

Simple and delicious raw, vegan curry. Ideal for lunch or dinner. 100% nutrients. DAIRY-FREE, GLUTEN-FREE. VEGAN.
Recipe type: Main
Cuisine: Indian
Serves: 4
Ingredients
  • 4 Medium Carrots turned into Julienne sticks and diced
  • 1 Good Handful of Green Beans, diced into 1cm pieces
  • Cups of Fresh or Frozen Peas (thawed)
  • 1 Cup of Fresh Shredded or Dried Coconut soaked for 1-2 hrs in water
  • 1 Dsp Mild South Indian Curry Powder – Coriander, Cumin, Turmeric, Ginger, Mustard, Fenugreek, Cinnamon, Cloves, Cardamom, Chilli and Pepper. You can blend all these spices yourself and have fun finding the flavour you most enjoy.
  • Juice from a Lime
  • Splash of Macadamia Oil
  • Red Chillies for Garnish
  • S&P if required
Instructions
  1. Add all the prepared vegetables to a prep bowl along with the coconut and spices.
  2. Blend together and add the lime juice to create a moist mixture.
  3. Serve in a nice white bowl and garnish with the red chillies. TIP Prepare in advance to allow the flavours to infuse.

Red Plum & Padre de Pimiento Salad

At this time of the year, plums are plentiful as are sweet chillies – Padre De Pimiento’s – are available in abundance.

Now these Padre De Pimientos are also known as the Roulette Chilli because one in every 12 is hot but acceptable even to the untrained chilli palate.

With the plum combination the tastes are amazing.  You may also use cherries, which also provide a sweetness against the backdrop of the savoury chillies.

This salad combination is a real winner with family and guests.

A great dish to prepare when these padre de pimiento chillies and plums are in season, wherever you are in the world. GLUTEN FREE, DAIRY FREE Raw Vegan Recipe
Recipe type: Lunch
Cuisine: Italian
Serves: 4
Ingredients
  • 2 Cups of Red Plums stoned and sliced
  • 5 Green Padre De Pimentos – sliced crosswise with seeds intact
  • 2 Spring Onions – sliced
  • ¼ Cup of Pine Nuts
  • Olive Oil
  • Juice of 2 Limes
  • 1 Dsp. Apple Cider Vinegar
  • S&P
Instructions
  1. Mix the plums and chillies in a prep bowl
  2. Add the sliced spring onions and the pine nuts
  3. Sprinkle with olive oil, lime juice and apple cider vinegar
  4. S&P to taste
  5. Toss ingredients together and transfer to a serving bowl

Another popular raw mushroom dish from our Tuscan Celebration Menu this month.  All dishes presented on this site are gluten and dairy free.

Mushrooms with Wild Herb Cream - Raw Vegan Recipe

A delicious take on the ever-popular Italian food. All dishes are uncooked and use the finest organic or spray free fruits and vegetables. Dairy free, gluten free.
Recipe type: Starter or Main
Cuisine: Italian
Serves: 6
Ingredients
Mushroom Marinade
  • 12 Med. Size Swiss Brown or Portobello mushrooms bases trimmed and marinated in the following mixture for 2-3 hours:
  • 1 Cup of Olive Oil
  • ¼ Cup of Lime Juice
  • ¼ Cup of Coconut Palm Syrup or Agave
  • S&P
Wild Herb Cream
  • ½ Cup of RAW Cashews – soaked for 3-4hrs
  • ½ Cup of Macadmia Fines – finely chopped macadamia nuts
  • 1 Garlic Clove
  • Juice from 2 Limes
  • 2 Tsp. Fresh Thyme leaves and as many whole fresh pieces of thyme as you have mushrooms for garnish
  • 1 Dsp. of Olive Oil
  • S&P to taste
Instructions
  1. Blend the WHC ingredients and adjust flavours to suit your taste by adding extra of anything based on your preferences.
To serve
  1. Remove the mushrooms from the marinade onto kitchen paper to absorb the excess moisture.
  2. Line the mushrooms up on a nice serving platter.
  3. Drizzle the cream sauce over the top.
  4. Finish off by adding the thyme pieces as the garnish.
  5. Splash some olive oil over the top along with an additional grind of black pepper.

My new ‘themed’ menus are going down a treat (pardon the pun).  As 2013 began, I decided to introduce a variety of tastes from around the world that we all love.  My RAW Vegan lifestyle is never boring, in fact, there’s hardly a carrot in sight in my kitchen these days because I experiment with lots of different ingredients and flavours.  My latest hobby (and part of my course experience for my guests) is to select a recipe at random from my favourite magazines and cookbooks such as ‘Gourmet Traveler’ or ‘Dish’ and then replicate them WITHOUT cooking and WITHOUT using flour, processed sugars, dairy or meat products.

RAW Falafel and Coriander Cream

I’ve surprised myself at the outcomes and the simplicity with which some of the worlds favourite dishes can be created simply by using a little imagination.  What a great way to relax after a challenging day at work or when the kids have gone to bed.  Sit down with a nice cuppa or glass of your favourite tipple and switch off from the daily routine and just contemplate the possibilities.

This very popular RAW Falafel is easy to make and keeps well in your fridge. Prepare in advance - ideal Party Food or as a Starter or Main
Recipe type: Party Food, Starter or Main
Cuisine: Mediterranean
Serves: 30
Ingredients
  • 2 Cups of Dried Chick Peas left to soak overnight and rinsed over 2-3 days to stimulate sprouting.
  • 1 Cup of Fresh or Frozen Garden peas thawed.
  • ¼ Diced Red Onion
  • 1 Clove of Garlic
  • Clutch of Fresh Coriander
  • ½ Tsp of Cumin Powder
  • ¼ Tsp Coriander Powder
  • Lge Squeeze of Lemon/Lime Juice
  • Dash of Macadamia Oil
  • S&P
Instructions
  1. Combine all the ingredients into your food processor and mix thoroughly holding back on some of the oil and juice. Consistency should be firm and cohesive so that you can either roll into small balls or make patties.
  2. Lay the patties out on your drying tray if you have a dehydrator or baking dish if you intend to use your oven to dry on no more than 50C, fan on and door open. Dehydrate for several hours turn every hour.
  3. These will be ready between 3-4 hrs.
  4. A fan oven may only take 2-3 hrs. You will know when they are dried.
  5. Serve with Coriander garlic cream sauce.
  6. Use the cashew cream recipe shown in the Moussaka recipe but remix by adding more lemon/lime juice and a small clutch of fresh coriander.

 

January and February saw the introduction of a RAW Italian meal theme, and after posting some of those dishes on my Facebook page, the cry went out for more ‘themed’ menus. So March has had me focusing on Greek food and with bookings already coming in for April, I’m now looking at Moroccan, Indian, Thai and Turkish with no doubt many more examples of this wonderful world’s cuisines to play around with.

So far, the response has been phenomenal.  In fact, every single class this year has been SOLD OUT well in advance and in some cases even over-subscribed.  Recently, my partner Clare and I moved into a new house with the genuine intention of being able to cope with the growing demand.  We’ve also been asked for ‘immersion’ courses and are now planning on offering residential courses over the weekend or longer in the coming months.  So, if you’re serious about changing your eating habits and find you need a bit more than just a day class, we will be able to invite you to come and live with us in our beautiful home in the Noosa Hinterland very soon.

I am often asked by people who are finding out about the RAW Food LIfestyle for the first time- ‘How do you keep your belly warm during the colder months?’. It falls into the ‘How do you get your protein?’ category of questions from learners and doubters. Easy for me. I add HOT spices and herbs to my RAW food and I also use my dehydrator to ‘warm’ foods to a tepid state.

Last night I needed ‘warming up’ and this is what I prepared. A simple and Piping RAW tomato soup with heaps of chilli and garlic..and HEMP seeds !! Served with seed snackers.

The cold winter months question can be addressed by thinking just a tad laterally. More intrinsically naturally hot foods do the trick. Chilli, ginger, turmeric, galangal, garlic, onion, kale and hemp. Kale and hemp you might say ? They are active plant proteins and they are like plasma for your warp core. They provide positive nutrients immediately to my bio system – try them out on yours and see what happens. I also find tomatoes very heating for my body – may be its the antioxidant lycopene in them, especially sun dried or dehydrated toms.

I love turmeric. Where I live in Australia it grows so well along with ginger and garlic. I add it into my food whenever I can. Its health giving qualities are amazing including helping to reboot the bodies immune system allowing it to remain strong and defensive against chronic illness.

So how are you going to warm you belly today? I thought it through and it works. Break the old spell of ‘Can’t Do’ to ‘CAN DO!!’ Have the courage to experiment with foods you might intuitively be drawn too and have a go!!

There is nothing more satisfying than a Great Belly Warmer.

For most people, when all else fails they reach out for food as a way to sustain them through their emotional peaks and troughs. This is why I always have something on hand – my convenience food, my fast food- when, I too experience a trough from time to time.

In the old days it was ‘see who could get to the crisps fastest’ – now it’s ‘ take the guacamole from the fridge and smear liberal amounts onto some nice crispy seed snackers and life all of a sudden takes on a different hue’.

I encourage you to compare the colours of the image below and that of the interior of a bag of crisps!!

Some years ago when I experienced chronic salmonella poisoning picked up from a communal chopping board – I was a vegetarian at the time and someone had used a Vege chopping board to slice meat on- I had to be nursed back to life with lots of vegetable soups. The treatment worked a treat.

So in this RAW realm, my other standby is Tepid Miso Vegetable Soup – just divine. I chop up a handful of fresh vegetables, make up a Miso solution with warm water, add in some lime, Shoyu and a dash of macadamia oil (to make it slide down easier !! ) – place the bowl in the dehydrator for 15 mins on 115F AND VOILA. Soup to warm the cockles of one’s heart and soul.

So, if faced with RAW despair – don’t – just reach out to your fav Guacamole recipe and some RAW Miso Soup. You will be buoyed beyond despair and catapulted into a place of joy and happiness. Works always for me every time and it will probably work for you too.
