How To Make Spicy Coconut Flakes In 4 Easy Steps

One of the most popular condiments served up daily in our new vegan cafe, is my Spicy Coconut Flakes.  I often wake up with recipe ideas in my head and this one came to me about a year ago.

Every batch I make is slightly different so don’t worry about differences in colour or flavour.

The main thing is just to enjoy this tasty accompaniment and know that it’s much healthlier than a bag of crisps or chips.  (See below for nutritional information).

Sprinkle onto soup or salad or simply enjoy as a snack on their own.  Here’s the recipe…

How To Make Spicy Coconut Flakes In 4 Easy Steps

A simple snack for any occasion!! These spicy coconut flakes are easy to make and store really well in airtight container. Don't have a dehydrator? No problem!! Use a fan oven at 50deg with the door slightly ajar.
Recipe type: Appetiser/Snack
Cuisine: Vegan
Ingredients
  • 500g Organic Coconut Flakes
  • 1 Cup Organic Wheat Free Tamari
  • 1 tsp Smoked Paprika
  • ¼ tsp Dried Cardamom
  • ¼ tsp Ground Cinnamon
  • ⅛ tsp Cayenne Pepper (Chilli)
Instructions
  1. Place Coconut Flakes in a large mixing bowl
  2. Combine spices in a bowl or bag and mix or shake well
  3. Coat coconut flakes with spice mixture
  4. Place in dehydrator at 48 deg for several hours, turning regularly until dry and crispy
Notes
1. If you don't have a dehydrator, you can use a fan oven turned to 50 deg celcius and keep the door slightly ajar. The goal is to remove the moisture without 'cooking' the product.
2. If coconut flakes begin to soften after storing for a while, simply pop back into the dehydrator or fan oven for 10 mins or until crispy again.
3. Adjust seasoning to suit your own personal taste.

You can adjust the spices to suit your own tastebuds.

Chocolate Carrot Mud Cake

A quick and easy Mud Cake that everyone will enjoy, combining Chocolate Cacao and Carrots!! GLUTEN FREE and DAIRY FREE which leads to worry free indulgence.

Serves: 4-6
Ingredients
BASE
  • 2 cups of Pecans
  • 2 Medium Carrots (grated)
  • 6 Medjool Dates (stones removed)
  • ¼ cup raisins
  • ⅓ cup Coconut Palm Nectar
  • ⅓ cup Raw Cacao
  • ⅓ Cup Carob Powder
  • 200 gm Desiccated Coconut
  • 2 Tbsp Flaxmeal
  • 1 Tsp Vanilla Essence
ICING
  • 2 Avocados
  • 2 Tbs Coconut Oil
  • ½ cup Coconut Palm Nectar
  • ½ cup Cacao Powder
  • ½ Tsp Vanilla Essence
Instructions
BASE
  1. Place nuts and carrot into food processor and blend thoroughly.
  2. Add remaining ingredients and blend again until firm, dough-like consistency
  3. Place mixture into a round food form or small cake tin
  4. Set aside in freezer for 20-30 mins to firm up
ICING
  1. Using a food processor, blend all ingredients until smooth
  2. Taste as you go and add more sweetener if required
  3. Remove cake from the food form or cake tin and, using a flat knife, spread the chocolate icing over the top and sides.
Notes
You can give this a smooth or a rough finish. Get creative. Garnish with edible flowers or fresh fruit or just serve as it is.

Warming and nutritious RAW Soup for the cooler days. GLUTEN-FREE - DAIRY-FREE
Recipe type: RAW Vegan Soup

Ingredients
  • 500g Organic Fresh or Frozen Peas (thawed)
  • 1 Cup of freshly chopped Rocket
  • 1 Medium clove of Garlic (optional)
  • 1 Dessertspoon of Macadamia Oil
  • ½ Tsp Salt
  • ¼ Ground Pepper
  • ¼ Freshly Chopped Mint
Instructions
  1. Combine all ingredients in a blender for a few minutes until smooth.
  2. Add some almond milk if you want a smoother consistency.
  3. TIP: Letting the blender run for a while will warm the soup up without cooking it.
